Wine Profile
Tasting Notes
The Cabernet Sauvignon displays bright purple hue. With aromas of Black forest fruits with concentrated black olive and mulberry, creating complexity. The palate remains supple and elegant, this wine first displays blackberry and dense plum which lead to an elegance nutmeg and cassis. Persistent dark fruit and fine grained tannins create a refined and persistent palate.
Vineyard Notes
Our diligent attention to detail in the vineyard through crop thinning and opening up the canopy have meant that our vineyards produced excellent fruit quantity and quality. As the vineyard was managed well we have produced a classic medium bodied Hunter reds.
Production Notes
The old vine Cabernet Sauvignon is hand harvested at low yields, providing wonderful fruit flavour concentration The wine was then matured for 10 months exclusively in premium French oak After bottling, the wine rested in our climate-controlled cellar prior to release on the 13th of June 2024.
Winemaker Notes
After a wetter than average July and August, we’ve moved towards beautiful warm weather across November and the start of December, creating the perfect growing conditions for Vintage 2023. The 2023 vintage experienced a mild start to the season the conditions for the red harvest where exceptional with the warmer conditions and a small amount of afternoon rainfall guiding the reds to ultimate balance of sugar and flavour ripeness. An exceptional growing season and vintage, similar to the great 2014 season. With dry and warm to hot conditions throughout. The 2023 vintage sees excellent whites and exceptional reds being released that enjoyable as youthful wines but are going to age incredibly well.
