The Hunter Valley’s warm lingering summers offer the ideal conditions for the “nobal rot” (Botrytis Cinerea). On the slopes of the Estate Semillon block a small parcel in the lowest lying area of the vineyard is cordon cut to concentrate the fruits natural sweetness.

Tasting Notes
A beautiful, bright yellow which will deepen to a golden hue with bottle age. This wine displays tropical fruit aromas with a hint of citrus, and is incredibly fresh and balanced across the palate with a luscious honey dew mouth- feel, complex acidity, and continued clean primary fruit textures to the finish.
Vineyard Notes
In the Semillon vineyard we allow 20 rows to produce the botrytis affected fruit. The method of hand harvesting the vineyard over three different occasion provides the most concentrated and ripest flavours, and allows this style of wine to display the diversity of the Semillon grape.
Production Notes
Patience is the key to making a Botrytis wine as we wait for the grapes to be ready to harvest, then ferment the wine in vat. The key is creating balance between fruit and oak, sweetness and acidity.
